He joins an already impressive list of chef fans of the knives, including John Campbell from The Vineyard at Stockcross, in Newbury, Berkshire, Anthony Demetre from London restaurants Wild Honey and Arbutus, and Mike Robinson from The Pot Kiln in Yattendon, Berkshire.

The IO Shen brand has always pursued direct input from all of its supporting chefs when adding new knives to the range to ensure that the finished product meets the demands of the professional market.

Williams, who left London five years ago to buy the Wellington, in Wellington, Herefordshire, with his wife Philippa, scooped the top title in the PubChef Food Excellence Awards at an awards ceremony at London’s Dorchester Hotel.

“I was already using IO Shen knives and was proud to be approached to contribute towards the development of their range,” he said.

Natalie McVeigh, Knife Wizard commercial director, commented: “Ross is the ideal choice to complement our team of supporting chefs and, like IO Shen, he is a relative newcomer to the industry.”
