Jamie shares his Ultimate Christmas

Jamie Oliver shares his 20 years’ experience of cooking Christmas dinner in a one-hour special next Monday (December 19).

In ‘Jamie’s Ultimate Christmas’, which airs at 8pm on Channel 4, the celebrity chef pulls together his knowledge and proficiency to bring together ‘the very best of Christmas’.

The starting point is what Jamie calls ‘the three foundations of Christmas’: turkey, gravy and roast potatoes. He says your guests will forgive you any mistakes as long as the turkey’s succulent, the gravy’s tasty, and the spuds are perfect.

Jamie will serve the main course with side dishes of Brussels sprouts done with chorizo and chestnuts, and glazed carrots.

He also shares some other dishes: gravadlax steeped in a beetroot, horseradish and vodka marinade; chocolate pots; turkey risotto; cocktails; and a classic beef Wellington.

A book to accompany the show – ‘Jamie Oliver’s Christmas Cookbook’ – is out now, published by Michael Joseph/Penguin.

Chapters include Smart Starters; The Main Event; Veggie and Vegan Plates; The Wonderful World of Potatoes; Scrumptious Vegetables Gravy, Sauces and all the Trimmings; Incredible Leftovers; Spectacular Festive Puddings; Afternoon Tea and Sweet Treats; Cute Edible Gifts; Super-Fantastic Salads; Dips, Bites and Handheld Nibbles; Perfect Christmas Drinks; and a Guide To Roasting Meat.

The title also features technical information such as cooking charts, and wherever possible, Jamie has designed the recipes to be cooked at the same oven temperature, to help with timings and oven space. –
