Heston adds meat dishes to his Waitrose range

Waitrose & Partners will launch a range of meat dishes from internationally acclaimed chef Heston Blumenthal on October 10.

The additions to the exclusive ‘Heston from Waitrose’ range are described by the supermarket chain as ‘restaurant-quality dishes centred around delicious, and sometimes forgotten, cuts of meat, all with a curious Heston interpretation’.

Heston says: “I’ve always been fascinated by learning from historic recipes. In the library in Bray [the Berkshire town is home to his award-winning restaurant The Fat Duck], I have a few books that look like they are falling apart but are full of wonderful nuggets of information. They are key when doing research and they served as great inspiration. With these meals, we looked into the recipes and worked very closely with the Waitrose team to deliver not only top quality dishes but something that is curiously special.”
The range comprises:

Heston from Waitrose Veal Chop and Sweetbreads, ‘Sauce Reform’, Sherry Vinegar Butter (£22/serves two)
This prime veal chop – brined to retain succulence – with a spiced rub of lemon, juniper, mace and green peppercorns, is served with veal sweetbreads. The veal is accompanied by a smoky sherry vinegar, Worcestershire sauce butter and a ‘Sauce Reform’ based on beef stock with red wine, redcurrant, lemon, capers and shallots. A British culinary history classic, ‘Sauce Reform’ dates back to the 1800s, originating from the Reform Club on London’s Pall Mall.

Heston from Waitrose Coffee & Porcini Steak, Mushroom Ketchup, Bone Marrow Sauce (£14/serves two)
This thick cut bavette steak has a coffee and porcini rub and a mushroom ketchup with red wine and aromatic spices. A smokey sherry vinegar and herb butter and a rich bone marrow sauce complete the dish.

Heston from Waitrose Spiced Rack of Pork, Black Pudding, Quince, Gherkin, Mustard & Calvados (£22.99 per kg)
This double pork chop, brined in a nutmeg, clove and mace marinade, is wrapped in a black pudding stuffing. The chop is served with a gherkin, mustard and Calvados sauce and a quince and apple compote. A bacon and crackling crumb completes the dish.
